Mark Livingstone, our head chef, sources local ingredients, for a modern Australian menu. Guests enjoy dishes such as ‘Char grilled corn fed chicken breast with mozzarella, fricassee of roast onion and sweet potatoes, witlof and apricot salad’. There are vegetarian, gluten free and dairy free choices. The menu is a-la-carte. Mains range from $17 for ‘Leek, fennel and sweetcorn risotto, spinach and grana padano’ to $39 for ‘Char grilled medalions of Black Angus tenderloin with French fries, arugulas and béarnaise sauce’.

When you book and pay online, your payment will be for your cave tour, plus a small amount to hold your table in Chisolm's. Then after dinner, you will need to pay for what you ordered, IN ADDITION to what you pay today.

Chisolm’s, was built in the fashionable Art Deco style of 1926, with lofty columns, high bay windows and imposing ceiling, deeply embossed with strong geometric patterns - a place where important people dined. You can enjoy all the refined ambience of those architectural features, which are still there.

The Lucas is a massive, awe-inspiring cave, featuring our highest and largest chambers. See one of our most photographed features - The Broken Column - and get a tantalising glimpse of the underground river. This tour involves 910 stair steps – but we lead you at an easy pace.
